Ms. Elizabeth Choi loves to create. She serves as the CEO of RxFood and holds a degree in Systems Design Engineering from the University of Waterloo with a specialization in Statistics. Diet has affected numerous aspects of her life as she has lived through a severe eating disorder for over a decade. Living and experiencing the process of undergoing medical nutrition therapy in combination with her belief in creating unique technologies to solve grand challenges, has gravitated her to this space, tackling the problem in a unique way. Her previous career was in finance, trading on Wall Street and Bay Street, and managing foreign reserves for the Bank of Canada.
